Today is February 7, 2016, but to football fans today is Super Bowl Sunday! Super Bowl 50 to be exact! The game between the Denver Broncos and Carolina Panthers is being played in Santa Clara, CA, which just happens to be the place I and my husband call home. To say Super Bowl fever has taken over our town is a bit of an understatement, but we been fortunate to not get caught up in the thousands of people or traffic jams. On the bright side, the weather has been outstanding and everyone seems to be really enjoying themselves.
As for us we’ll be having a small Super Bowl Party like everyone else and I’ll be making my bean chili. It’s super easy, filling and tasty – you won’t miss the meat!
Here’s my recipe!
2 CANS EACH RED KIDNEY, GARBANZO, CANNELLINI AND BLACK BEANS, Rinsed
2 CANS DICED TOMATOES WITH LIQUID
1 WHOLE WHITE ONION -DICED
1/2 CUP CHILI POWDER
1 TABLE SPOON CAYENNE PEPPER – you can use less or more if you like
2 TABLE SPOONS WORCESTERSHIRE SAUCE
2 TABLE SPOONS GARLIC POWDER
1/4 CUP TABLE SUGAR
1 1/2 CUPS OF TEQUILA OF CHOICE – I use a good tequila, if you wouldn’t drink it , why would you cook with it.
Put everything into a slow cooker and cook on High for 4 hours or low for 8 hours with the lid on.
Stir occasionally, if you want a thicker chili, cook last hour with out lid on.
No Slow Cooker – no Problem – Cook everything in a large stew pot, bring to boil, then lower heat and simmer for two hours.
I serve my chili with sour cream, shredded cheese and corn chips – so yummy!
